This is a seasonal classic during the months of September to November when you have way too many apples in your kitchen. Being one of the fluffiest variants of apple loafs out there, the Apple Fritter Loaf is a staple for autumn (super yum)!

    Apple Fritter Loaf
    INGREDIENTS

    Apple Mixture
    • 2 large cut apples
    • 1/2 cup brown sugar
    • 1 1/2 tsp cinnamon
    • 1/2 tsp ginger
    Wet Mixture
    • 2 eggs
    • 1/3 cup granulated sugar
    • 1/4 cup vegetable oil
    • 1/4 cup skim milk
    • 1/4 cup sour cream
    • 1/4 cup brown sugar
    Dry Ingredients
    • 1 cup flour
    • 1 1/2 tsp cinnamon
    • 1/4 cup crushed pecans
    • 1 tsp baking soda


    INSTRUCTIONS

    1. Preheat oven to 350 degrees Fahrenheit.

    2. Mix chopped apples, brown sugar, and all spices (cinnamon, ginger, nutmeg) together in a medium bowl.

    3. Whisk eggs, granulated sugar, vegetable oil, sour cream, milk, brown sugar, and vanilla extract together in a large bowl. Add in flour, cinnamon, crushed pecans, and baking soda until completely mixed in.

    4. Fold in all of apple-cinnamon mixture into the batter.

    5. Prepare loaf pan (9 x 9 in) with nonstick spray, then pour completed batter into pan. Bake for around 40-45 minutes or until the toothpick / knife comes out clean. Enjoy!
